Honey Sweetened Pecan Pie

Ingredients

Crust

  • 2 1/2 cups flour

  • 1 Tablespoon sugar

  • 1 cup cold butter

  • 1 teaspoon salt

  • 3/4 cup ice cold water

Filling

  • 2 1/2 cups pecans 

  • 3 large eggs 

  • 1 cup brown sugar

  • 1 cup honey

  • 1/4 cup butter melted

  • 1 teaspoon vanilla extract

  • 1 teaspoon kosher salt

Instructions 

  • Preheat oven to 350°F.

    Crust:

  • To make crust put all ingredients except cold water in food processor and pulse till butter is pea size. Add water and mix just till combined. 

  • Knead dough into ball on floured surface, split into two. Roll half out and line pie pan. You can save the other half of the dough for another pie!

    Filling:

  • In a large bowl, whisk together the eggs, sugar, honey, melted butter, vanilla, and salt. Fold in pecans. 

  • Pour the filling into the unbaked pie crust.

  • Bake the pie for 60-70 minutes until set. It's okay if it is slightly wobbly in the center still. Cool completely for at least 3 hours before slicing or overnight.
