Honey Sweetened Pecan Pie
Ingredients
Crust
2 1/2 cups flour
1 Tablespoon sugar
1 cup cold butter
1 teaspoon salt
3/4 cup ice cold water
Filling
2 1/2 cups pecans
3 large eggs
1 cup brown sugar
1 cup honey
1/4 cup butter melted
1 teaspoon vanilla extract
1 teaspoon kosher salt
Instructions
Preheat oven to 350°F.
Crust:
To make crust put all ingredients except cold water in food processor and pulse till butter is pea size. Add water and mix just till combined.
Knead dough into ball on floured surface, split into two. Roll half out and line pie pan. You can save the other half of the dough for another pie!
Filling:In a large bowl, whisk together the eggs, sugar, honey, melted butter, vanilla, and salt. Fold in pecans.
Pour the filling into the unbaked pie crust.
Bake the pie for 60-70 minutes until set. It's okay if it is slightly wobbly in the center still. Cool completely for at least 3 hours before slicing or overnight.
